A creamy chicken and peach casserole with a slightly sweet and spicy flavour, topped with cheese and buttery toasted almonds. A family favourite that is perfect for dinner and can easily be prepared ahead.

Notes

Make ahead - The casserole can be prepared the day before and kept in the fridge overnight. I actually think it tastes even better this way, as the flavours have more time to come together.
Serving - Serve with rice and vegetables, and a salad if you like.
Tips - Use a fairly deep baking dish so there is plenty of room for the chicken, peaches and sauce. Do not be afraid to season the chicken well - the peaches and creamy sauce will soften the heat as everything bakes together.
