Eat Your Water Salad

A fresh and colorful salad filled with spinach, fruit and berries, with an optional honey and citrus dressing.

Ingredients

  • 200 g spinach
  • 1 cucumber
  • 1 orange
  • 2 clementines or 1 additional orange)
  • 1 kiwi
  • 100 g raspberries
  • 100 g blueberries
  • 20 g prunes
  • 20 g honey
  • 10 g extra virgin olive oil
  • 1 tbsp freshly squeezed orange or clementine juice

Instructions

  • Rinse the spinach and let it drain well. Add it to a large salad bowl.
  • Cut the cucumber into small pieces.
  • Peel the orange, clementines and kiwi and cut them into small pieces.
  • Cut the prunes into small pieces and add everything to the bowl with the spinach.
  • Add the raspberries and blueberries and gently toss everything together.
  • Add the honey, extra virgin olive oil and freshly squeezed orange or clementine juice to a small bowl.
  • Mix well until combined.
  • If using the dressing, pour it over the salad and gently toss before serving.

Notes

 
The dressing is optional. I often enjoy this salad both with and without it. 
If clementines are not available, use an additional orange instead.
For a little extra spice, you can use chili-infused olive oil in the dressing.
Store the salad covered in the refrigerator for 3-4 days.
