A fresh and colorful salad filled with spinach, fruit and berries, with an optional honey and citrus dressing.

Ingredients
200gspinach
1cucumber
1orange
2clementinesor 1 additional orange)
1kiwi
100graspberries
100gblueberries
20gprunes
20 ghoney
10 gextra virgin olive oil
1tbspfreshly squeezed orange or clementine juice
Instructions
Rinse the spinach and let it drain well. Add it to a large salad bowl.
Cut the cucumber into small pieces.
Peel the orange, clementines and kiwi and cut them into small pieces.
Cut the prunes into small pieces and add everything to the bowl with the spinach.
Add the raspberries and blueberries and gently toss everything together.
Add the honey, extra virgin olive oil and freshly squeezed orange or clementine juice to a small bowl.
Mix well until combined.
If using the dressing, pour it over the salad and gently toss before serving.
Notes
The dressing is optional. I often enjoy this salad both with and without it. If clementines are not available, use an additional orange instead.For a little extra spice, you can use chili-infused olive oil in the dressing.Store the salad covered in the refrigerator for 3-4 days.
