Chocolate Banana Protein Pancakes Recipe

I love making pancakes, especially when I can turn them into something that is both delicious and filling. These chocolate banana protein pancakes are one of the versions I keep coming back to.
They are made with banana, eggs, chocolate protein powder, oat bran and chia seeds. They are high in protein, filling and a great option for breakfast, lunch, a snack or even a dessert.
I usually make a batch and keep the rest in the fridge, so I have something ready for later. I like them jist as they are, but they are also really good topped with Greek yoghurt, berries and a little honey. š„šš«
Ingredients
- 30 g chocolate protein powder
- 3 eggs
- 1 egg white
- 30 g oat bran
- 1 banana (approx. 130 g)
- 10 g chia seeds
- 5 g cocoa powder
- 3 g vanilla sugar
- 1 tsp baking powder
- 1 tbsp Sukrin Gold, optional
- 20 g rolled oats, optional for thicker pancakes
Tip: The riper the banana, the sweeter the pancakes will be. If your banana is very ripe, you may not need the Sukrin Gold at all.
How to Make It
Step 1 ā Mix the ingredients
Add the eggs, egg white and banana to a bowl. Add the chocolate protein powder, oat bran, chia seeds, cocoa powder, vanilla sugar, baking powder, and Sukrin Gold, if using.
Step 2 ā Blend and rest
Use an immersion blender to blend everything until smooth. Let the batter rest for about 20 minutes so the chia seeds can absorb the liquid. If you prefer thicker pancakes, add the extra rolled oats.
Step 3 ā Cook the pancakes
Heat a non-stick frying pan over medium heat. Spoon the batter into the pan to make pancakes in your preferred size. Cook for about 2-3 minutes, until bubbles begin to form, then flip and cook for another 1-2 minutes.
Step 4 ā Serve
Enjoy them warm, or let them cool and keep them in a fridge for later. They are delicious on their own or topped with Greek yoghurt, berries and a little honey.
