Chocolate Banana Protein Pancakes

Protein.rich chocolate banana pancakes made with banana, eggs oat bran and chia seeds. Filling, delicious, and perfect for breakfast, lunch or snack.

Ingredients

  • 30 g chocolate protein powder
  • 3 eggs
  • 1 egg white
  • 30 g oat bran
  • 1 banana approx. 130 g
  • 10 g chia seeds
  • 5 g cocoa powder
  • 3 g vanilla sugar
  • 1 tsp baking powder
  • 1 tbsp Sukrin Gold optional
  • 20 g rolled oats optional, for thicker pancakes

Instructions

  • Add the eggs, the egg white and banana to a bowl. Add the chocolate protein powder, oat bran, chia seeds, cocoa powder, vanilla sugar, baking powder and Sukrin Gold, if using.
  • Use an immersion blender to blend everything until smooth.
  • Let the batter rest for about 20 minutes so the chia seeds can absorb the liquid. If you prefer thicker pancakes, add the extra rolled oats.
  • Heat a non-stick frying pan over medium heat
  • Spoon the batter into the pan to make pancakes in your preferred size. Cook for about 2-3 minutes, until bubbles begun to form, then flip and cook for another 1-2 minutes.
  • Enjoy the pancakes warm or cold. They are delicious on their own or topped with Greek yoghurt, berries and a little honey.
  • Store leftover pancakes in the fridge for later.

Notes

The riper the banana, the sweeter the pancakes will be. If your banana is very ripe, you may not need the Surin gold at all.
