Eat Your Water Salad
This colorful salad is filled with spinach, cucumber, fruit and berries, and has been one of my favourites for years. I started making it after discovering Dr. Howard Murad`s “Eat your water” philosophy, and it has stayed with me ever since.
I make it both with and without dressing, depending on what I feel like that day. It is fresh, juicy and full of flavours.
Ingredients
Salad
- 200 g spinach
- 1 cucumber
- 1 orange
- 2 clementines ( or 1 additional orange)
- 1 kiwi
- 100 g raspberries
- 100 g blueberries
- 20 g prunes
Dressing
- 20 g honey
- 10 g extra virgin olive oil
- 1 tbsp freshly squeezed orange or clementine juice
How to Make It
Step 1 ā Prepare the spinach
Rinse the spinach and let it drain well. Add it to a large salad bowl.
Step 2 ā Prepare the fruit and cucumber
Cut the cucumber into small pieces. Peel the orange, clementines and kiwi and cut them into small pieces. Cut the prunes into small pieces and add everything to the bowl with the spinach.
Step 3 ā Add the berries.
Add the raspberries and blueberries and gently toss everything together.
Step 4 ā Make the dressing
Add the honey, extra virgin olive oil and freshly squeezed orange or clementine juice to a small bowl. Mix well until combined. If using the dressing, pour it over the salad and gently toss before serving.
Storage
The salad keeps well in the refrigerator for 3-4 days when covered. Store in a covered bowl or an airtight container.
Tips
If clementines are not available, simply use another orange instead.
The dressing is optional – I enjoy this salad both with and without iit.
For a little extra heat, you can use chilli-infused olive oil in the dressing instead of the regular extra virgin olive oil.
Why I Started Making My Eat Your Water Salad
I first came across Dr. Howard Murad`s “Eat Your Water” philosophy in 2019. At the time, I was working with skincare, and we also sold Murad skincare products where I worked. I became very interested in his approach to skincare, nutrition and wellbeing.
I was so interested, in fact some of my colleagues even started calling me Mrs. Murad. šš
One of the ideas that stayed with me was his “Eat Your Water” philosophy – the idea of including plenty of water-rich fruits and vegetables in your diet. It inspired me to think differently about the fruits and vegetables I choose to eat, especially those naturally rich in water. That was how I started making my own Eat Your Water Salad.
And all these years later, I still make it. I am very conscious of what I eat and how I take care of my skin and my body, and for mw, this salad feels a little magical. It is filled with fruits, berries and vegetables that provide fibre, vitamins, antioxidanter and plenty of water – and I genuinely love eating it.
